It is run by Michelle and Rodel, a family of five who started with one food truck.

The Story

From One Truck to Your Fridge

In April 2025, Michelle and Rodel took a big dream, a lot of good food, and their three kids along for the ride, and rolled the VP Eats food truck into the Niagara Region. The idea was simple: bold Asian-inspired cooking, made properly, brought to whatever community they parked in that day.

Niagara took to it immediately. What was meant to be a fun way to share their food turned into lineups, regulars who tracked the truck from stop to stop, and a name that travelled fast for a business that had only just started.

Catering came next, then a permanent kitchen. In June 2026, just over a year after the first service, VP Eats opened its brick-and-mortar location at 495 York Rd in Niagara-on-the-Lake.

Through all of it, one request kept coming up. People did not just want this food on a Saturday. They wanted it on a Tuesday night after work, on a Thursday between shifts, on the days when cooking was never going to happen — and they wanted it to be food that was actually good for them.

That is what VP Eats meal prep is. Rodel took the recipes people were already driving across the region for, and built them into complete, calorie-conscious meals you can keep in the fridge and heat in minutes.

The Meals

Asian Fusion, Built to Be Healthy

Korean BBQ short ribs, honey garlic chicken, Vietnamese braised pork belly, Thai peanut tofu. The flavours are pulled from across Asia and blended the way Rodel cooks them, which is why the menu never sits still — a new lineup goes up every week.

Healthy is built in, not bolted on. Every meal is a complete plate — protein, vegetables, and carbs portioned together in one container, under 550 calories with up to 46g of protein. Everything is cooked fresh in the Niagara-on-the-Lake kitchen, nothing arrives frozen, and meals keep five days in the fridge.

The point is that eating well should not cost you flavour. These are meals you would order at a restaurant, portioned so they fit the week you are actually having.

The Founders

The Dynamic Duo Behind VP Eats

Michelle and Rodel did not set out to run a food business. They set out to feed people properly, and everything since has been built around that.

The dream was theirs together: take the food Rodel had spent his career cooking, and get it in front of the region they live in. One truck, one menu, and a bet that if the food was good enough, Niagara would come back for it. It did.

Rodel cooked in some of Toronto\'s top restaurants before starting VP Eats.

Rodel has spent more than twenty years in kitchens, including some of Toronto's top restaurants. His skills could make any professional chef jealous, and the food is the proof.

Those years are what make the healthy side work. Cutting calories is easy if you do not care how the food tastes; keeping a dish under 550 and still worth eating takes technique. Sauces are built rather than poured from a jar, proteins are portioned by hand, and vegetables get treated like part of the meal instead of filler.

He cooks every meal that goes out. If a dish is not right, it does not leave the kitchen.

Michelle's passion for flavour-packed meals runs just as deep, and she is the reason the rest of it works. The weekly menu, the orders, the Sunday delivery runs, the hundred small decisions a food business needs made before noon — that is her, so Rodel can work his magic in the kitchen.

She is also the first person customers talk to, and a good amount of what ends up on the menu starts as something a regular asked for.

Why We Do It

A Family of Five, Feeding Yours

VP Eats has never been just the two of them. Michelle and Rodel have three kids — R, A, and B — and all five of them have been part of this since the truck\'s first day.

A family of five knows exactly how a week goes. Cooking every night is the first thing to fall apart, and when it does, the food that fills the gap is rarely food anyone feels good about. That is the problem these meals are meant to solve.

It is also why the portions are what they are. Rodel has never been able to plate a small portion for someone he cares about, and nobody at this table gets sent away hungry. These meals are what Michelle and Rodel would want waiting in their own fridge on a Wednesday.

If it is not good enough for our table, it does not go on yours.
